Cayenne

Dried pods of a red chilli pepper are ground to produce this hot, pungent spice, though other spices are often added to the powder in its commercial form. It is very hot and should therefore be used sparingly. Cayenne is used in white sauces, soups and stews. It combines well with cooked cheese.
