These spherical seeds can vary when ripe from pale green to cream or brown, but can also be bought ground into a powder. They taste rather like orange peel, and in India tend to be roasted, which brings out a more curry-like flavour. Coriander is a basic spice in Indian curries but is also used for pickles and sweet dishes, including certain types of cake. It is a mild spice and should therefore be used in relatively large quantities.
