Curry leaf

Although relatively rare outside India, curry leaves can be bought fresh or dried from shops that specialize in Indian spices. They are a speciality of southern India, where they are used mainly in vegetarian dishes. The dried leaves will often have lost their flavour, and should not be bought unless they smell strongly of curry.
