This sweet-tasting fruit is available all year round. Look for firm, evenly yellowed skins with no blackened patches. Bananas can be eaten raw, on their own, or in fruit salads, baked, fried, flambéed with liqueurs, or added to pies, desserts and ice creams, cakes and bread. They are also available dried. Where appearance is important, use immediately or sprinkle with lemon juice to prevent discoloration.
