Pistachio nuts

Available whole or shelled, pistachio nuts are delicious green nuts which may be roasted, salted and eaten as a snack, or used to flavour and colour ice cream, Turkish delight and halva. They are also delicious in salads and stuffings, either coarsely chopped, pounded to a paste, or both. They are sold with dyed red shells or their natural tan ones.
