Gram flour is made from ground chick peas. A popular feature of Indian cookery, it has a good flavour and creamy texture. It forms a batter when mixed with water that is much used in India for coating foods for frying, and is also used for various sweetmeats. It is very useful for making soups and sauces; as it is additive-free it must be stirred vigorously to eradicate all the lumps.
