Tiny salted and dried shrimp (❷ bottom), sometimes labelled ‘dried prawns’, are sold in Asian stores and will keep for a long time. They are not meant to be reconstituted, but are used as a flavouring, although they are generally soaked in hot water for 5-10 minutes prior to use. See also shrimp paste.
