There’s only one way to confidently and accurately measure flours for pizza making: by weight, using a quality digital home kitchen scale. They’re widely available and inexpensive (about $20). The result will be a better, more consistent pizza.
Alternatively, measuring by volume (i.e., by cup measure) simply doesn’t measure up. In our own experiments, the weight of a cup of gluten-free flour can vary by as much as a whopping 44 percent depending on how loosely or tightly packed the cup is. That’s just too much variability to get great gluten-free pizza, time after time. Measure your flours by weight down to the gram.
