Known as eggplant in the US and aubergine in England and France, these dishes were cooked using the long, slender purple variety. Believe it or not, eggplants are supposedly a member of the potato family! It was believed that old brinjals may harbour worms. Therefore, when selecting brinjals, choose those that are not too soft to the touch to ensure they are young. It is also important that the brinjal is not too light or the flesh may be dry.
