The leaves of the Chinese lettuce are longer and greener than those of the iceberg lettuce. The leaves can be used to line the popiah skin before spreading the condiments, or after, when making popiah. To avoid tearing the popiah skin, it is better to remove the rib of the leaf. Chinese lettuce is also used to tease the lions during the Chinese New Year lion dance in a ceremony to scare away evil spirits and to summon luck and fortune. The Chinese word for lettuce also sounds like the word for fortune.
