These green pods resemble long slender fingers, hence their name. Also known as okra, ladies’ fingers are popular in the southern part of the US where they were introduced by African slaves. When cooked long enough, ladies’ fingers produce a glue-like substance that thickens the sauce. Do not buy pods that are too long as they may be tough and fibrous.
