This pungent, hot, fermented pickle, usually made with cabbage, is an essential accompaniment to just about any Korean dish you can think of. It is usually sold in plastic tubs or packets in the refrigerated section of Asian food stores. If you’re lucky, you might even find it sold from the stone pot in which it was fermented.
