Mushrooms, shiitake (or Chinese mushrooms)

Flat, dark brown capped mushrooms popular in both China and Japan. Fresh shiitake are quite common these days, but they are more commonly bought in their dried form. When soaked, these have a pungent flavour and a firm chewiness.
