The Thai name for a type of fish sauce made from freshwater mud fish. It is popular in Laos and northern Thailand. The pickled fish can be found in Thai groceries in jars under the name of pickled gourami. Boil it with 500 ml (16 fl oz) of water until fish disintegrates, then strain.
