What
Nobody quite knows how an Italian-style fine vermicelli noodle found its way to India, but nobody is complaining, either. Finer than angel hair pasta, sevian — also called sev — is enjoyed throughout India in a milk pudding known as sevian kheer. It is also sometimes used in soups.
Why
Because these noodles have a pleasant fresh bread smell and a good, discernible taste that becomes even more pronounced when fried in ghee. But mainly because of the way they feel in your mouth, brushing it gently like the bristles of a soft shaving brush.
