What

Ramen are not really Japanese, but are based on the Chinese wheat noodle (the name simply means Chinese noodle), and are popular vending machine and supermarket snacks, sold as cup noodles or instant noodles. Japanese noodle purists refuse to recognise them, but there is a noble side to ramen. In Japan, they are also sold by street vendors late at night, and by specialist noodle houses who generally serve the noodles with hot broth, topped with fish cake and pork slices.

Why

For exactly the same reason that wheat noodles are so popular, not only all over Asia, but the world. They’re no fuss, they’re basic, they’re recognisable, they’re easy, and they make you feel good.
