Gooksu is the generic term for noodle in Korean, although the word usually refers to these long wheat flour noodles. Gooksu, or Korean ‘knife cut’ noodles, were traditionally made at home with wheat flour, egg and water, and cut into long, thin, pale strips. These days, however, they’re more likely to be bought dried, from Korean and Asian food stores. They are generally served in soups, and accompanied by spicy kim chee, fermented cabbage. Their most famous incarnation is kalgooksu, a spicy, anchovy-flavoured soup.
