Cover the base of a frying pan with a thin film of vegetable oil, heat until it is just sizzling, then toss in the almonds. Fry them on both sides until toasted an amber colour - about 5 minutes. Remove with a slotted spoon and drain on paper towels before using. Alternatively you can heat them carefully for a few minutes in a hot oven or under the grill, taking care to ensure they do not burn.
