Tunisians and Libyans use curcuma with alacrity while Moroccans don’t use it at all. It is, in fact, turmeric, a major ingredient in curry. Recent research suggests that curcumin, a compound found in turmeric, may help reduce the brain damage associated with Alzheimer’s disease, as well as having antioxidant properties that can help stave off other types of disease.
