An inexpensive, highly nutritious, and versatile food, abura agé finds its way into many Japanese dishes. (In this book there is a recipe calling for fried bean curd as an ingredient in a soup.) Fried bean curd should be kept refrigerated at all times and should be consumed within 3 days of purchase. Freezing changes the texture of the product, making it unpleasantly spongy, and I do not recommend it, although you will find fried bean curd imported from Japan in the freezer section of your Oriental market. Buy locally made bean curd products whenever possible. Fried bean curd needs to be blanched just before using, to remove the thin film of oil that covers the packaged slices.
