This dark, nut-flavored vegetable oil is best used to add aroma to other oils. Dark sesame oil cannot be used by itself for deep-frying. (There is a type of cold-pressed sesame oil processed from white seeds that can resist the high temperatures of a deep-fryer, but it is very expensive and difficult to find here in the United States.) A few drops of the dark oil will nicely flavor other cooking oils. Buy just a small bottle of the deep-amber-colored oil unless you plan on using a great deal of it within 2 or 3 months. Store the oil on a cool, dry shelf in your cupboard.
