This is the most prized of the red caviars in Japan. Red is a color of felicity, and these large glossy globes are often served on happy occasions. Price is usually a good indication of quality. Each of the eggs should be nearly ¼ inch in diameter and full (no puckering), the color a vivid orange red. Store fresh caviar in the refrigerator, covered, for up to a week.
