Large pale pumpkin-like gourds called fukubé are harvested and peeled into long ½-inch-wide ribbons and dried for several days. These are sold in cellophane bags containing very long (several-yard) lengths or short (6-inch) lengths. It is best to buy the uncut gourd ribbons since they are easier to use when tying up edible packages such as the Golden Purse Sushi.

Refrigerate what you don’t use after opening. Stored in a closed plastic bag, the dried gourd (which is still pliable, not brittle) will keep for months.
