Packages of dried buckwheat noodles are available at all Oriental groceries, and at many supermarkets too. Sometimes a grated yam called yama imo has been added as a binder to the dough before the noodles are rolled and cut, but this does not affect the taste of the noodle. Store as you would any dried pasta product.
