These spiked sea creatures look like chestnuts. The soft, briny-tasting gonads are the edible portion. Usually a gold or reddish gold in color, fresh uni is a costly delicacy in Japan. Here the price is usually fairly reasonable. Have your fish market cut open the spiked creature and remove the roe, or purchase already removed roe from a Japanese food store. Use uni within 24 hours and keep it refrigerated until you use it.

A paste called neri uni is also sold, bottled, at most Oriental groceries. This briny paste is used as a seasoning for other ingredients; in this book I call for neri uni to be mixed with egg yolks to make a glaze for broiled fish.
