Icing sugar is regular granulated sugar that is ground to a very fine powder. It contains 1–2 per cent corn flour which helps to prevent it from clumping together due to humidity. The presence of corn flour in icing sugar renders it unsuitable for use in cold desserts such as jellies, as it affects appearance and taste. If using pure icing sugar, sift it before use.
