Grinding your own almonds is an easy thing to do and makes a huge difference to whatever recipe you use them in. The quality in flavour compared to pre-ground almond meal is incomparable. Almost without exception pre-ground almonds are rancid and devoid of any flavour and sweetness. We feel so strongly about this at Attica that all nut meal must be made to order. Just blitz your nuts in a food processor, then pass through a drum sieve. Repeat with the bigger pieces until you have a fine nut meal.
