This is a natural weak organic acid, which is used as a preservative or acidulant. Natural citric acid is extracted from fruits. Synthetic citric acid is produced from sugar with the help of bacteria and yeasts. I use natural citric acid when I want to add an acidic edge to a dish but don’t want to add any further liquid (that is from fruit juices or vinegar).
