Cocoa Mass, Cocoa Nibs, Ethically Produced

Cocoa beans are dried, roasted and then winnowed to remove the outer skins leaving the cocoa nibs. These are then processed into cocoa butter and cocoa mass. These are available from specialty food stores and specialist pastry suppliers.
