When making caramel, after the sugar water comes to a boil, brush the inside of the pan above the water line with a pastry brush dipped in water or cover the pan with a lid for 15 seconds. This will clean off any residual sugar.
It can be a tough job to clean a pan that has hard caramel stuck on the inside. Put some water in the pan and bring it to a boil. The hard pieces of caramel will melt when the water gets hot, and cleaning will be a breeze.
