Place the coconut in a single layer on a parchment paper-lined baking sheet. Bake in a preheated 350°F oven for 5 minutes, then stir the coconut and continue to bake another 2 to 3 minutes, or until evenly golden brown. Watch the coconut carefully, as it burns quickly, especially around the edges.
