In season, you can use fresh passion fruit. You can also use unsweetened purée. To purée fresh passion fruit, cut the passion fruit in half and scoop out the insides. Purée in a food processor and then strain. The little black seeds are edible, but I don’t use them in ice cream. (See Sources for purée and fresh passion fruit.)
