Using Scraps of Unsweetened Dough

These may be treated the same way as the sweet dough scraps below or used to make a savoury snack. Form the scraps into a square and wrap and chill if the dough has become soft. Place the square of dough on a floured surface and flour it; roll it to a rectangle twice as long as it is wide. Spray or brush the dough with water and sprinkle on some grated dry cheese, fresh or dried herbs, or even some coarse salt and freshly ground pepper on the bottom half of the dough. Fold the top half of the dough down to enclose the seasonings and press well. Roll again to almost the original size and use a pizza wheel to cut the dough into 0.5cm-wide strips. Transfer them to a parchment-covered tin and bake them at 180Β°F/gas mark 4 until golden and dry, about 15 minutes.
