A soft neutral cheese created in 1906 by Egidio Gal-bani, who built one of Italy’s leading cheese factories. You can always distinguish this cheese by its wrapper which depicts in green a map of Italy, the “Bel Paese.” The flavor is less distinctive than others, yet it serves as a good foil in a pasta dish when combined with other, more assertive ingredients. It has about 89 calories per ounce.
