The fresh perfume of this aromatic herb is a particular favorite of Roman cooks. Although there are over 20 species and many subspecies of mint, the one used most often in Italian cooking is spearmint. One may use mint in combination with cheese to fill cannelloni or ravioli or add a few torn leaves to a fresh tomato sauce. Use only fresh mint in cooking.
