This herb is most closely associated with Naples, where volatile lovers of flavorful food respond passionately to oregano’s call to be noticed. Add oregano, fresh, if possible, to sauces or on top of melted cheese when cooking is nearly completed. Though oregano dries more successfully than most herbs, it too can become old and musty. Rub a pinch between your fingers and sniff before using the dried oregano. This herb is also called wild marjoram. Its sweet cousin is simply called marjoram and can usually be interchanged with oregano.
