The word pazienza is frequently uttered in Italy, often with a slight shrug of the shoulders. Patience is a great virtue, one characteristic of many Italians. It helps them endure hardships born of bureaucracy as well as the daily dramas of lives lived passionately. For cooks, patience will permit you to carefully knead, roll out, and cut or fold dough for pasta. You may patiently dice and slice ingredients for sauces using fantasy and creativity. By not heating a meat sauce too quickly, you will be rewarded with a delicious ragù in which all the elements have successfully blended to create a magnificent total.
