pasta wheels (rotelline tagliapasta): There are 2 basic types—straight-edged and fluted. These are sometimes referred to as ravioli wheels. A good knife can usually take the place of a straight-edged wheel, though the latter is easier to use. A fluted wheel is necessary for obtaining the ruffled edge for pastas such as farfalle, pappardelle, and lasagne.
