Do not let the sfoglia get too dry before cutting it. Use a knife or a pasta wheel with either a straight or fluted edge. Your lasagne should be 3 to 4 inches in width and as long as you would like them to be. The average length is probably 4 to 8 inches, but sometimes it can be as much as 15 inches. Cut the sheet of sfoglia into widths and then cut in the other direction to produce the desired lengths.
