Also called bigoi. Homemade spaghetti produced in the 3 Veneto provinces and in Mantua. The longest of all pastas, they are served with sauces based on fish, onions, or tripe. The word probably comes from bigato, or worm, an apt description for these long noodles that wriggle as they are twirled on a fork or sucked into the mouth.
