Always buy nuts fresh as they do not improve with age and can go rancid. Keep in a cool, dry place in an airtight container. You can also store them in the freezer in an airtight container to keep them fresh.

Almonds The fruit of the almond tree is called a drupe. Almonds are sold shelled or unshelled.

Blanched almonds are shelled almonds that have been treated with hot water to soften the seed coat. I prefer to use almonds from Avola in Southern Sicily. They have a high oil content and a delicate perfume.
