You can buy vanilla extract, but I prefer to use the real thing. It can be expensive to buy the best quality vanilla, however the difference in flavour is huge. I tend to buy Tahitian vanilla with its delicate flavour or Madagascan with its fruitier notes. (Bourbon and Mexican are also good). Store it in an airtight container in the fridge to keep it moist and fresh.
