Sapsago Cheese

Is a rindless green cheese flavored with the herb blue melilot. Shaped into small cones, it was made in Pennsylvania into the nineteenth century but is now available only as an import from Switzerland. It is a key ingredient in historical Pennsylvania Dutch cookery.
