Fresh red peppercorns are almost impossible to get hold of in the west; they are usually cured in brine or vinegar. However, Bart Spices biodynamic freeze-dried red peppercorns from Kerala are a good substitute. They have a delicious toffee-like flavour and a wonderfully rounded lingering heat. Use them in the same way as green peppercorns.
