Mellow, sweet and peppery, la kama is a simple Moroccan spice mix in which pepper rather than chilli provides the heat. The blend contains black pepper, ginger, cinnamon and nutmeg, and is typically used to flavour soups and stews. It is particularly good with chicken and lamb.
