Zapallo macre is a large round squash with dark green skin and bright yellow flesh. In Peru these pumpkin can grow to astounding sizes. A favourite soup is crema de zapallo served with crispy croutons. The flesh of the zapallo macre is also added as a purée to the dough for the Peruvian beignets picarones.
