Flour can have drastically different weights per cup, depending on how compressed it is in the cup. If you don’t have a kitchen scale, you must measure your flour by a particular method. Do not compress the flour into your measuring cup before leveling it off. Instead, scoop small spoonfuls of flour into the measuring cup, then level it off by scraping the flat side of a knife over the edge of the cup. Flour quantities will be listed both by cups and by weight in grams—I recommend you use the grams.
