Fruit can also have different weights per cup, depending on its water content and the size of the fruit pieces, which are crucial factors in determining how runny or congealed the filling will be in the finished product. Fruit quantities will be listed both by cups and by weight in grams—I recommend you use the grams.

Look closely at the numbers on the scale. Flour that is compacted into a measuring cup (top) can weigh 25 percent more than flour that is measured with a light touch (second from top). Fruit that takes up the same amount of space (second from bottom and left) can have very different weights depending on its size, shape, and water content.
