An emulsion process that begins with a tablespoon of water, to which unsalted butter is added. In a saucepan bring the water to the boil and then reduce to a low heat. Whisk chunks of butter into the water, piece by piece, to create an emulsion. To get the quantity of beurre monté you require just keep adding pieces of butter.
