How to cook plain black rice

  • About
  • Use 1 cup of rice to 2 cups of water (190g/6¾oz rice to 480ml/16fl oz water).
  • Soak the rice in cold water for at least 2 hours, even overnight, then drain.
  • Put the rice in a colander and rinse under cold running water until the water runs clear. Leave to drain.
  • Put the rice in a saucepan and add the water. Bring to the boil, then boil vigorously for about 30 minutes (if soaked) or about 1 hour (unsoaked), uncovered, until almost dry with a dimpled surface.
  • Cover tightly, remove from the heat and leave to stand for 20 minutes.
